
What you need
- 370ml Delamere Channel Island milk
- 1 plump moist vanilla pod, split lengthways
- 4 large egg yolks
- 80g sugar
- Roasting tray with water

What you do
- Pre-heat oven 160°C.
- Scrape the vanilla seeds from the split pod and place in a saucepan with the pods and Channel Island milk. Bring to the boil.
- Whisk the yolks and sugar with an electric whisk until thick and light in colour.
- Slowly pour in the milk whilst still whisking.
- Remove the pods, divide between the dishes and bake for 35 minutes in a Bain Marie (tray of water). Chill for at least 4 hours before serving.
