Little Jersey Vanilla Custards (serves 8)
What you need
  • 370ml Delamere Channel Island milk
  • 1 plump moist vanilla pod, split lengthways
  • 4 large egg yolks
  • 80g sugar
  • Roasting tray with water
What you do
  1. Pre-heat oven 160°C.
  2. Scrape the vanilla seeds from the split pod and place in a saucepan with the pods and Channel Island milk. Bring to the boil.
  3. Whisk the yolks and sugar with an electric whisk until thick and light in colour.
  4. Slowly pour in the milk whilst still whisking.
  5. Remove the pods, divide between the dishes and bake for 35 minutes in a Bain Marie (tray of water). Chill for at least 4 hours before serving.
